Booking Budget Holidays!


Booking flights can be expensive, but if you know how you can save yourself pounds on flights simply by booking in advance. 
This year we flew to Alicante in Spain with RyanAir via Stanstead
12 perfect days of sunshine, amazing food and swimming. 



And this is how we are going to do it next year... 

Using sites such as Skyscanner, Kayak, and LastMinute you can plan the perfect trip!

Using Skyscanner, we search online choosing the whole month then selecting the cheapest month for travel you are able to view on the calendar and select all the days that are offered at the lowest rate and how many people will be travelling. 


January is generally the cheapest month to fly, but booking in advance you can book about 6-8 months before you plan to travel, monitoring sites prices over a number of days, or weeks is also advisable as the prices can be offered at lower or higher rates from day to day. 

When booking long flights from London - Brazil the prices could be from anything between £300 - £4,000 (return flights) sometimes more.

For the main of the holiday we were in temperatures 29 / 30 degrees so we found these perfect coconut ice-creams which mainly consisted of cream and coconut and tasted all so good! see below for the recipe



Ingredients

2 cups milk
2 cups heavy cream
2 cups coconut milk
1 cup coconut flakes, toasted
8 egg yolks
11/2 cups sugar
Pinch salt
Directions
Bring milk, heavy cream, coconut milk, and coconut flakes to simmer in heavy saucepan for a few minutes. Allow to steep for 10 minutes.
Whisk the egg yolks, sugar, and salt together, long enough to dissolve the sugar.
Temper hot liquid into egg mixture. Return all back into saucepan over low heat, stirring all the while, until mixture starts to thicken. Strain. Chill immediately over ice bath.
Churn in a standard ice cream machine.






One of the highlights of the travel to this region is the orange growth, a valley of clementines everywhere you go. Don't miss out on the freshest orange juice right on your doorstep!

Valencia is also the home of Paella which is well worth a try! Especially as we love Prawns (Gambas, Camaroes)

The other thing you will need to get you on your way is Euro's to spend... for this we used google to search online and compare current rates. We went with the NO1 Currency, by ordering online you are guaranteed the rate at the time of online purchase and have two days to collect, the money was ready within about an hour...again I looked at this over a number of days and waited for the currency rate to reach a better rate and then just clicked and collected, payment on collection and they even text and email you when it's ready! bonus!
